Here's the best Vegan Chili Recipe Below!!
If you're looking for an easy lunch/dinner recipe or some chili that tastes even better as leftovers, then this is the recipe for you! This can be made vegan recipe or as a vegetarian recipe.
INGREDIENTS
- 2 lb Vegan Ground Beef
- 1 Sweet Onion, chopped
- 8 cloves of Garlic, minced or chopped
- 1 Green Bell Pepper, diced
- 1/4 c fresh or dried Parsley (chopped)
- 2 Tbsp. fresh Chili Powder (1/4 cup = spicier)
- 1 1/2 tsp Cumin
- 3 can(s) (15 oz. each) low fat, Reduced Sodium Vegetable Broth
- 1 can (28 oz.) Crushed Tomatoes (drained)
- 1 can (15 oz.) Kidney Beans (drained & rinsed)
- 1 can (15 oz.) Chili Beans
- 1/2 c Vegan Cheese, shredded (I like either cheddar or mozzarella as a topping with this chili!)
DIRECTIONS
1 - In a large pot over medium heat, add onion, garlic, bell pepper, and parsley. Cook, stirring occasionally (about 6 minutes).
2 - Stir in chili powder and cumin; cook for another 2 minutes.
3 - Add broth, tomatoes and beans; bring to a boil over high heat.
4 - Reduce heat; cover and simmer for 80 minutes.
5 - Add beef to simmering ingredients. If you choose a precooked vegan beef, simply add it and let it heat up for the last 10 min. If not cook it fully before adding it to the chili.
6 - Top with cheese. (optional)
