This juicy, grilled watermelon salad is the perfect, unexpected summer side dish! The recipe would work wonderfully with grilled peaches or nectarines, too!
Grilled Watermelon Salad
recipe adapted from Five Ingredient Fix with Claire Robinson
1/3 seedless watermelon sliced into large planks with rind removed
Olive oil or cooking spray
Kosher salt, to taste
Fresh ground black pepper, to taste
Baby Spinach (or greens of your choice)
Goat cheese (feta or mozzarella would be tasty, too!)
Balsamic Reduction (Recipe below)
Brush watermelon planks lightly on both sides with olive oil or lightly coat with cooking spray. Place on preheated grill for 1-2 minutes per side to develop grill marks. Remove and let cool slightly. Season watermelon with kosher salt and black pepper. Chop watermelon into bite-sized chunks. Top salad greens with watermelon pieces, chunks of cheese, and balsamic reduction. Enjoy!
Balsamic Reduction
In a small saucepan, bring ½ cup balsamic vinegar (or more if you’re feeding more than 2 people), to a boil over medium high heat. Reduce heat to low and simmer, stirring regularly, for about 10 minutes until the vinegar has reduced by at least half and has thickened to a more syrupy consistency. Be warned—simmering vinegar has a pungent aroma, but the flavor is worth it! Allow to cool.
