Making videos does not always go as planned. There are always some technical issues and this video represents my attempt to patch together our 2 nights at Red Rock Canyon National Conservation Area. I include a couple of segments to answer viewers questions: how we unpack and foot wear recommendations.

I was asked to post the recipe for my soup. These are rough estimates as I have made it so many times and it doesn't really matter what you put in it. The secret is using "Better Than Boullion". It makes a great base for every soup, whether potato or asparagus or broccoli. It contains a good bit of salt so don't add any.

1/2 a yellow or sweet onion
1 stalk of celery
1 can stewed tomatoes + some water to get soup to consistency you like
1/3 cup barley (more or less to your liking)
1 small or medium russet potato
heaping tablespoon of "Better than Boullion" chicken flavor (if it's the organic one, you may need more because it doesn't pack the same flavor punch)
spinach
1 can of drained red kidney beans

Saute the chopped onion and celery in a little olive oil. Dice up the potato and add. Use an emersion blender to chop up the stewed tomatoes. Add that (and some water--maybe 1/2 cup) to the pot along with the barley and cook until tender. Before serving, add the beans and spinach and cook until heated. Garnish with cheese of choice and bread or crackers. That's it, super easy.
