Ingredients:
Bitter Gourd (Karela): 2-3 medium-sized, sliced
Onion: 1 large, finely chopped
Tomato: 1 large, chopped
Potato (optional): 1 large, peeled and cubed
Green Chili: 1-2, finely chopped (optional)
Garlic: 3-4 cloves, minced
Ginger: 1-inch piece, minced
Turmeric Powder: 1/2 teaspoon
Coriander Powder: 1 teaspoon
Cumin Powder: 1/2 teaspoon
Garam Masala: 1/2 teaspoon
Red Chili Powder: 1/2 teaspoon (adjust to taste)
Cumin Seeds: 1/2 teaspoon
Mustard Seeds: 1/2 teaspoon (optional)
Oil: 2-3 tablespoons
Salt: To taste
Sugar or Jaggery: 1 teaspoon (optional, to balance bitterness)
Fresh Coriander: A few sprigs, chopped (for garnish)
Water: As needed
Steps:
Prepare the Karela:
Slice the bitter gourd thinly and sprinkle salt over it. Let it sit for about 30 minutes to help draw out some of the bitterness. Rinse the slices thoroughly and pat them dry with a paper towel.
Heat Oil:
In a pan, heat the oil over medium heat. Add cumin seeds and mustard seeds (if using). Let them splutter.
Add the finely chopped onions and sauté until they become translucent. Add minced garlic and ginger, and cook for another minute until aromatic.
Cook Karela:
Add the prepared karela slices to the pan. Sauté for 5-7 minutes until they start to brown slightly.
Add Spices and Potatoes:
Stir in turmeric powder, coriander powder, cumin powder, garam masala, red chili powder, and salt. Mix well. If using potatoes, add them now and stir to combine.
Add Tomatoes and Water:
Add the chopped tomatoes and cook for a few minutes until they soften. Add a little water if needed to help the cooking process. Cover and cook on low heat for about 15-20 minutes, or until the karela and potatoes are tender.
Adjust Flavors:
Taste the curry and adjust seasoning. Add a teaspoon of sugar or jaggery if desired to balance the bitterness. Stir well.
Garnish and Serve:
Garnish with chopped fresh coriander. Serve hot with roti, paratha, or rice.
