How I smoke Oysters on the cheap to use for salads, pizza, crackers and cheese etc.
Oyster brine for 3 dozen oysters. Double for more
1/2 qt filtered water
1 C pineapple juice (or vermouth or sweet white wine)
1/8 C Kosher salt
1/8 C light brown sugar
1 Tbsp soy sauce
3 bay leaves
1/2 t garlic powder
1/2 t white pepper
For large to jumbo oysters I recommend parboiling them for 3 min prior to smoking or they will not cook thoroughly.
