Today we are trying a WFPB Carrot Cake Oatmeal using Steel Cut Oats! It's healthy, easy to make and tasty! I love making steel cut oatmeal in the instant pot, and trying new Whole Food Plant Based recipes. Today's recipe is a perfect combo of the two! GF Rolled Oats: [ Ссылка ] (if you're not a fan of steel cut oats!)

🌱 Recipe:
1 cup steel cut oats*
1 cup grated carrots
8 chopped dates
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground ginger
2 cups water
1 cup plant milk
1/2 tsp. vanilla
1/3 cup raisins (to be added after cooking)
Chopped walnuts (add when serving)
Put all ingredients into instant pot (except for raisins and walnuts) and press Porridge (or high pressure) for 4 minutes. Allow the instant pot to complete its cook cycle, and then let the pressure release naturally for 15-20 mins. Release any remaining pressure and carefully open the instant pot. Add in raisins. When ready to serve, garnish with chopped walnuts (as well as maple syrup, more plant milk, ground flax, etc. if you desire).
*You can also swap for rolled oat or instant oats if you prefer, but please note: the cooking time will change drastically. If you use rolled oats, I would suggest cooking them for 10 minutes on the stovetop instead of using the instant pot (using a 1:2 oat to water ratio).
