Ingredients for making pumpkin lentil curry with spinach:
2 tbsp olive oil
1 tbsp sesame oil
1 small onion, diced
2 cloves garlic, minced
2 tbsp curry powder
3 cups vegetable broth
1 can coconut milk
1.5 cup pumpkin puree
2 tbsp tomato paste
1 cup red lentils (dry)
Salt and pepper
2 cups spinach
Instructions for making vegan pumpkin lentil curry:
- In a pot on the stove, first add your olive oil
- Then add in your sesame oil
- And add in your diced onion
- Followed by your minced garlic cloves
- Mix everything together while cooking
- Now add in your curry powder
- Followed by your vegetable broth
- Then add in your coconut milk
- Now add in your pumpkin puree
- Followed by adding your tomato paste
- Then add your dry red lentils
- Mix everything together thoroughly
- Cover and simmer for 10 minutes
- Season with salt and pepper to taste
- Cover and simmer for 5 minutes
- Then add in your spinach
- Your vegan pumpkin lentil curry is now ready to eat
