INGREDIENTS
5 ounces (140 grams) chicken breast
2 cheese slices
4-6 salami slices
Fresh basil
1/2 cup (70 grams) flour
1 egg
2 tablespoons milk
1/2 cup (55 grams) breadcrumbs
Vegetable oil for frying
Salt
Pepper
PREPARATION
Preheat the oven to 320°F/160°C.
Place the chicken breast on your chopping board.
Horizontally slice it through the middle to make room for the filling.
Add cheese slices, salami, and fresh basil.
Use some toothpicks to make sure you secure the filling.
Whisk the egg with milk and make some egg wash.
Coat the chicken with flour, egg wash, and breadcrumbs.
Heat the vegetable oil in a skillet over medium-high heat.
Add the schnitzel and cook it until golden and crispy on all sides.
Lay the schnitzel in a glass baking tray and season it with salt and pepper.
Slide it in the oven for the next 15 minutes.
