Sindhi Meethi Siwai Recipe
Ingredients-
200 gm Thin Vermicelli | बारीक सिवैया
4 Tbsp Clarified Butter | देसी घी
2-3 Tbsp Mix Dry Fruits | मेवा (Almonds, Cashew, Pistachios and Raisins)
250 ml Water | पानी
5 Tbsp Sugar | चीनी
1/2 Tsp Cardamom Powder | इलायची पाउडर
Method-
• Take a deep pan
• Add clarified butter and heat it on low flame
• Add Cashew nut and almonds and let them fry for 30 seconds
• Now add Pistachios and fry everything while stirring continuously, on a very low flame
• When Cashew starts to brown a bit, add Raisins towards the last and let it cook for 15 seconds
• Note- We are adding different dry fruits at different time as they take different time to cook, you can also fry them separately
• Now take all the fried dry fruits out and keep them aside
• In the same oil add thin Vermicelli. Crush it a bit to get small portions
• We have to roast the Vermicelli well, on a low flame
• Roasting Vermicelli will bring out the flavor very well
• Keep stirring, at first it will be little difficult to stir but you can break the Vermicelli even more using your spatula
• Note- Be careful as it will splatter around
• Roast Vermicelli until it's evenly brown and release good aroma
• Roasting will take around 8-10 minutes on a low heat, keep stirring continuously
• You can also use two spoons or forks to stir well as shown
• When properly roasted add 250 ml of water and mix everything well
• Cover the lid and let it cook for 6-7 minutes on a medium to low flame
• Open the lid and stir well, check the doneness - if not properly cooked you can add some more water and cook it further
• At this point it will look little wet
• Now add 5 tbsp of sugar and stir well until all the sugar is dissolved
• Add the fried dry fruits and mix well
• Cover and cook for 1-2 minutes on a low flame
• Open the lid and add cardamom powder and stir well
• At the end, add a splash of water and immediately cover the lid
• Let it cook on a low flame for a minute and then switch off the flame
• Keep it covered and rest for 5 minutes before opening
• Open the lid after 5 minutes and with very light hands fluff up the Vermicelli
• Your Sindhi style meethi siwai is ready, server hot
• Finally garnish it with some more fried dry fruits
