the craziest dinner ever!!! when I couldn’t get groceries, I knew I had to look through the pantry and fridge and see what I could make. I came up with sausage & fennel pasta, borani banjan, and arancini stuffed with mozzarella!

sausage pasta
1 pack of pasta
1 pack of sausage sliced up
3 onions sliced lengthwise
1 fennel bulb sliced
4 cloves of garlic chopped
*save pasta water* shredded parm on top
borani banjan
2-3 eggplants sliced in planks- salted and dabbed dry
2 onions sliced in rounds
2 tomatoes sliced in rounds
4-5 chopped tomato’s or canned chopped tomatoes
1 tsp cumin powder
1/2 tsp turmeric powder
2-3 chilis chopped
3-4 garlic cloves chopped
salt and pepper to taste
yogurt
chopped mint
chopped garlic
squeezed lemon
salt and pepper to taste
arancini-
cooked risotto
1 egg
3/4 cup shredded parmesan
mozarella chunks to stuff
1 cup breadcrumbs seasoned w salt and shredded parmesan
1 cup flour seasoned with salt
2 eggs seasoned with salt
