This is my way of making a green bean casserole that is unforgettable. The addition of chicken will make it a complete meal. I hope you love it as much as I did. Also this was a hit with my very picky eater, so definitely a winner.
You will need:
32 oz./ 2 pounds French beans. These are a little skinnier than regular green beans.
1 3/4 pound of chicken breast
1 large sweet onion for garnish
8 oz. Baby Bella mushrooms
4 oz. Cream cheese
4 cups milk
90 g unsalted butter
1/4 cup all purpose flour
1/2 tsp thyme or oregano
1/2 tsp herbs de Provence
Salt and black pepper to taste
1 1/2 cups flour
Preparation:
Start by dropping the French beans in boiling water for 7 minutes or until 70 percent cooked.
Remove and place in a cool ice bath to preserve the green color and stop the cooking.
Slice the onion thinly for later and set aside.
Chop the cleaned mushrooms finely and cook in a heated cast iron with butter until golden. This will take 5 minutes and you can choose to rinse the mushrooms first or wipe with a clean wet towel. I think a quick rinse will work well.
When the mushrooms are cooked nicely, you can season with the herbs, oregano, salt and pepper. Add the flour, mix and cook for a minute, then add the milk and whisk constantly until it thickens. Whisk in the cream cheese until mixture is smooth. Turn the heat off and set aside. Meanwhile slice the chicken breasts “preferably against the grain” into thin slices. Season lightly with salt and pepper and arrange in a baking dish. Spooon some of the cream mixture on top of the chicken, add the whole amount of French beans the the rest of cream of mushroom mixture. Bake covered at 385 degrees F for 20 minutes, uncover and cook another five and the dish is ready. The chicken won’t take long to cook, so keep and eye on it.
Place the onions in a bowl, season with salt and pepper and add lots of flour and cover all sides well.
Fry in batches at 350 degrees F until golden and crispy. Top the green beans casserole when you’re ready to serve and enjoy this delicious comforting warm dish. It’s the flavor of the season, save it, thanksgiving will be here soon.
