Ingredients
8oz Self raising four
8oz caster sugar
8 fluid oz unflavoured oil
2 tsp baking powder
Pinch of salt
4 eggs
1 tsp vanilla essence
6oz pitted dates
60z chopped walnuts
1 tsp bicarbonate of soda
Put chopped dates in a bowl along with bicarbonate of soda and pour boiling water over till just about covered. Stir and leave to one side for approx half an hour. When ready, preheat oven to 170 degrees/160 if fan assisted, and line 2 x 1lb loaf tins, or 1 x 2lb loaf tin.
Place eggs, oil and vanilla essence in a bowl, whisk till blended. Sift flour, sugar, baking powder, and salt into the bowl and mix till combined. Add dates along with the water, and chopped walnuts, mix together. The mix will be runny, but that’s ok. If you have 2 tins, divide the mixture between the 2, if you only have 1 x 2lb tin, pour all the batter in.
Place in the middle of the oven, and bake for at least 45 mins before testing if it’s cooked with a skewer. Test again at 5 min intervals till skewer comes out clean. If you have used a 2lb tin, your cake may take longer to bake.
Leave to cool, and enjoy.
I forgot to place 3-4 whole walnuts on the top of the batter for decoration, you can if you choose.
