medium saucepan
5 cups chicken stock
2 tea sp lemon rind grated
2 table sp lemon juice
bring to boil turn down low keep hot
large saucepan
80g butter use half
1 brown onion chopped
fry for 2 mins then add
other half butter once melted add
2 cups aborio rice mix well turn down to a little above low
add 1 cup stock mixture stir every couple mins til liquid gone add next cup of stock til liquid gone keep repeating. til all stock in and reduce and rice is cooked
serve with parmesan cheese or any and fresh parsley wedge lemon
