Seeds from wild plants, especially perennials, shrubs, and vines need to be cold stratified to sprout. Don't waste room in your fridge, instead do this in an unheated building over the winter. Label your containers so you know what each little seedling is. Different plant seeds will sprout at different times, so be prepared to pot new seedlings over several weeks.
In my area of the Midwest, hops grow wild along drainage ditches and creeks and in old fence rows. I collected seed from hop flowers last fall and mixed them with sand from the creek behind my house. I kept the container of seed and sand in the greenhouse all winter, watering from time to time so it wouldn't dry out but otherwise did nothing special. In the last 2-3 days I noticed they have germinated.
I have a little 8 ft x 12 ft hobby greenhouse. It is a lean to style built against the south facing wall of my shop.
