Camembert is a bloomy rind, French cheese classic, tastes moist, soft and creamy, and is from the Normandy region...but not this one. This is a 'camembert-style' cheese, made in the same way as a Camembert, but not from the proper region. This one is produced by a Canadian company, and has much less flavor than its French counterpart. The real, French camembert is name-protected. To try the real-deal, look for a cheese labelled, Camembert de Normandie. It is very similar to a Brie in flavor and texture, but is a bit more pungent, sour, chalky, and creamy when warmed.

Pairing Suggestions: A nice glass of Chardonnay or sparking wine will go quite nicely! Something without too much flavor so as not to over-power the cheese. The bubbles will help to cut through the creamy fat in a gooey cheese like this. And if you get something from Normandy, even better! To eat a camembert, I suggest baking it so it's even gooier, maybe even adding a sprig of rosemary on top. Or try pairing it with a fig jam!! Delicious.

If you can't find this cheese: Look for a cheese with the white mold rind. It's a special kind of mold, penicillium, that is used for camemberts, bries and other bloomy rinds. It gives the cheese a mushroomy, earthy flavor near the rind, and leaves the inside ooey gooey.
