Today's gin cocktail is perfect for Valentine’s Day - the Juliet & Romeo! An original recipe created by Toby Maloney in 2007, this has been a Valentine's go-to of mine ever since. If only Romeo and Juliet could've tasted this drink before the play ended, maybe the outcome would've been less tragic. Anyway, here's to all the couples out there! Cheers!

THE JULIET & ROMEO RECIPE
2 oz. (60 ml) Beefeater London Dry Gin
3/4 oz. (22.5 ml) fresh lime juice
3/4 oz. (22.5 ml) simple syrup (1:1 sugar:water)
4 drops rose water (1 drop for garnish)
*optional* .25-.5 oz aquafaba (see notes below)*
3 slices of cucumber
Small pinch of salt
Sprig of mint
3 drops Angostura Bitters
Mint leaf with rose water, and bitters for garnish

*NOTES - THE FOAM IS A BIT TRICKY
Due to this cocktail not having an emulsifier, getting that foam on top seems to be a bit hit or miss. My theory is that it depends on the cucumber. To solve this issue, adding .25-.5 oz of aquafaba will help ensure a foam on top, onto which you can place your bitters.
