This easy salad has all colors of fall in it. Super quick to make and healthy to eat!
Recipe:
1. Red beans- 1 cup
2. Chickpeas- 1 cup
3. Black eyed peas- 1 cup
4. Chopped cucumber- 1/3 cup
5. Chopped onion- 1/3 cup
6. Chopped fresh coriander- ¼ cup
7. Red bell pepper- 1/3 cup
Salad dressing:
1. Olive oil- 2 tbsp
2. Red chilli flakes- ½ tsp
3. Dried herbs of choice (we used thyme)- ½ tsp
4. Salt to taste
5. Black pepper powder- ½ tsp
6. Garlic powder*- ½ tsp
7. Lemon zest- ½ tsp
8. Lemon juice- 1-2 tbsp
* You may also use 1 finely chopped/minced garlic in place of garlic powder.
Method:
• For the salad dressing: mix all the ingredients in a small bowl and set aside.
• Combine red beans, chickpeas, black eyed peas, onions, coriander, and red bell pepper in a large bowl. Pour the salad dressing over everything and mix well.
