Today, I'm going to show you how to make a high-protein, low-carb version of Cauliflower Fried Rice with BBQ Pork and Chicken. Not only is it a healthier alternative to traditional fried rice, but it also offers a delicious flavor that will satisfy your taste buds. So let's get started!
INGREDIENTS
• Cauliflower (makes 2 cups of rice)
• 2 Eggs (Beaten)
• 1/2 cup Shallot (finely chopped)
• 4 Boneless Chicken Thighs (diced)
• 200 grams Chinese Barbecue Pork (Char Siu) (diced)
• 1 tsp Sesame Seed Oil
• 2 tbsp Light Soy Sauce
• 1 tbsp Oyster Sauce
• 1 cup Carrot (diced)
• 1/2 cup Green Peas
• 2 stalks Green Onion (chopped)
• 1/2 tsp Salt
• 1 tsp White Pepper
INSTRUCTIONS
• Cut the florets from the cauliflower and grate them in a food processor. Pulse until the size is similar to a rice
• Beat the eggs and fry them to make an omelet on a non-stick pan or wok. Slice into small pieces and set aside.
• Saute shallot for about a minute
• Add the chicken and cook until it's done
• Meanwhile, combine sesame seed oil, light soy sauce, and oyster sauce in a small jar. Mix well and add 2 tsp to the chicken
• Add carrots and stir fry until the carrots are tender
• Add Chinese Barbecue Pork and cook for a couple of minutes
• Add cauliflower and cook for a minute (don't cook for too long or it may turn soggy)
• Add the remaining sauce, green peas, green onion, egg, salt (if needed), and white pepper. Cook for another minute and enjoy!
