Loaded with fruits and assorted nuts and a sweet, light whipped cream filling, rainbow fruit parfaits taste as good as they look.
Prep Time: 20 minutes
Serves 2-3
Ingredients:
- Fruit Festa (drained): 307 gms
- Chopped Nuts: 1 cup
- Heavy Cream: 1 cup
- Zest of 1 Lemon
- Vanilla Extract: 1/2 tsp
- Honey: 1/2 cup
Method:
1. In a bowl add fruit fiesta and chopped nuts. Mix well and set aside.
2. In another bowl, add heavy cream. Whip to soft peaks. Add the zest of 1 lemon, vanilla extract and honey. Fold them into the whipped cream. Refrigerate for two hours.
3. To assemble the fruit parfait, add two tablespoons fruit mixture, top with 3-4 tablespoons of cream, another layer of fruit mixture and more cream. Repeat for all the glasses. Serve immediately or refrigerate for 6-8 hours before serving.
