PARSI OMELETTE
Ingredients
2 eggs
1 medium onion, finely chopped
1 teaspoon red chilli powder
¼ teaspoon turmeric (haldi) powder
Salt to taste
1-2 green chillies, finely chopped
1 teaspoon ginger-garlic paste
½ tomato, finely chopped
1 tablespoon coriander, finely chopped
1 tablespoon ghee
Jam for serving
Onions quarters for serving
2 pavs for serving
Method
1. In a bowl, break the eggs, add onions, chilli powder, turmeric powder, salt, green chillies, ginger-garlic paste, tomato and coriander. Beat it well using a fork.
2. Heat ghee in a non-stick pan and add the prepared omelette mix to it.
3. Cook for 2-3 minutes and flip it over. Cook for another 2-3 minutes flip again.
4. Transfer to a serving plate, and serve hot along with jam, onion quarters and pav.
