Korean Spicy Pork Ribs, Dwaeji-galbi
Ingredients
Ingredients
Baby back ribs----------------------------------------------------------1Kg
Seasonal green leaves(optional), for garnish----------50g
Dry Rub
Garlic(minced)-------------------------------------------------------- 2 tbsp
coarse sea salt------------------------------------------------------- 2 tsp
Ginger powder-------------------------------------------------------- 1 tsp
Ground black pepper---------------------------------------------- 1/2 tsp
Dry white wine-------------------------------------------------------- 1 Tbsp
Gochujang Sauce
Gochujang-------------------------------------------------------------- 3 Tbsp
Soy sauce--------------------------------------------------------------- 2 Tbsp
Sesame oil-------------------------------------------------------------- 1 Tbsp
Sugar---------------------------------------------------------------------- 1 Tbsp
Dressing for green vegetables
Soy sauce--------------------------------------------------------------- 1 Tbsp
Lemon juice------------------------------------------------------------ 1 Tbsp
Sesame oil-------------------------------------------------------------- 1 tsp

Instructions
1. Cut and trim baby back ribs
*how to trim the ribs: remove the membranes by inserting a paring knife under the membrane then slowly pull it and it will separate from the bones
*rinse the ribs in cold water. pat them dry
2. Preheat the oven to 220 celsious (428 Fahrenheit)
3. Make dry rub. Mince the garlic. In a bowl add salt, ginger powder, ground black pepper, dry white wine and minced garlic. Mix them well
4. Score the spareribs. Mix the ribs with dry rub
5. Bake the ribs in the preheated oven and bake for about 30 minutes, until light brown color
6. Take the ribs out of the oven and rest for about 10 minutes. Higher the temperature of the oven to 230 celsious (446 fahrenheit)
7. Make Gochujang sauce. In a bowl, add Gochujang, soy sauce, sesame oil and sugar. Mix them well
8. Brush the sauce on the ribs. Finish off under the oven for about 10 minutes, until they are slightly charred and caramelize
9. Plate the ribs
Optional: garnish with green vegetables. Drizzle soy sauce, lemon juice and sesame oil before serving
