Ingredients
6 tsp loose leaf black tea
700ml water
Around 350 – 400g fresh watermelon
2 tbsp lime juice
1 tbsp caster sugar
Handful mint leaves, plus extra for serving
Ice
Method
1. Add the loose leaves to the teapot with 700ml of recently boiled water. Leave to infuse for eight minutes.
2. Strain the tea and pop it in the fridge to cool.
3. Cut the watermelon into chunks and add it to the blender with the lime juice, caster sugar and mint leaves. Blitz until smooth.
4. Strain the watermelon juice through a sieve, pressing down with a spoon to help it come through.
5. Pour the cooled tea into a large jug. Add the watermelon mixture and stir well.
6. Fill pretty glasses with ice and pour in the watermelon tea. Garnish with fresh mint or lime wedges and enjoy!
