-10 Korean cucumbers (approximately 1.5kg or 3 lbs) or other cucumber options such as kirby cucumbers or English cucumbers
-1/2 cup sea salt
-2 liters water
-1/2 brown onion, diced
-1/3 medium-sized carrot, cut into matchsticks
-150-180g (5-6 ounces) Asian chives (or scallions as a substitute)
-3/4 cup Korean chili flakes (Gochugaru)
-2 tablespoons minced garlic
-1 tablespoon grated ginger
-5 tablespoons Korean plum extract (Maesil), or 1-2 tablespoons sugar/stevia as a substitute
-1/3 cup fish sauce
2 tablespoons saeujeot (salted shrimp), or 1/2 -1 tablespoon soy sauce as a substitute
