Josheelay Boti Kabab:
Ingredients
Boneless undercut ½ kg
Salt 1 tsp
Raw papaya 2 tbsp
Ginger garlic 2 tbsp
Sambal oleak 2 tbsp
Vinegar 1 tbsp
Hung curd 4 tbsp
Allspice ½ tsp
Lemon juice 1 tbsp
Oil ¼ cup
boti tikka masala 2 tbsp
Method
Marinate boties with all the ingredients for 1 hour, put on skewers and bbq over hot charcoal, serve with chatni.
Chicken Malai Tikka:
Ingredients
Chicken 1 kg
Barbeque masala 1 tbsp
Roasted and crushed cumin 1 tsp
Ginger garlic 1 tsp
Salt 1- ½ tsp
White pepper ½ tsp
Black pepper ½ tsp
Yogurt 3 tbsp
Cream ½ packets
Green chilies ground 4
Coriander leaves ground ½ cup
Mint leaves ground 12
Papaya 2 tbsp
Oil ¼ cup
Method
In a bowl add all the ingredients mix well, add chicken in this, rub well, put on flat skewers and bbq, brushing with oil occasionally, and turning the skewer till done.
Kabab-e-Gulmarg:
Ingredients
Beef Mince ½ kg
Chili powder 1 tsp
Salt 1 tsp
Green cardamom ¼ tsp
Egg 1
Saffron essence 2 drops
Coriander leaves 2 tbsp
Bread soaked in milk 2
Barbeque masala 1-½ tbsp
Method
Marinate mince with all the given ingredients for 2 hours, keep in fridge for 30 mins, and chopperize once again, make into seekh kabab shape, put on skewers and bbq.
