MANGO PRAWN COCKTAIL ENTREE APPETIZER

This delightful fast, fresh and tasty Mango Prawn Cocktail is very easy to make, combines the spectacular flavours of summer into a light fragrant appetiser which is best eaten slightly warm and served with lime wedges.
INGREDIENTS:
400 grams of green prawns shelled
100 grams diced fresh mango flesh
5 grams fish sauce
5 grams of sugar
freshly cracked pepper to taste
10 grams salad dressing
10 grams finely chopped coriander (cilantro) leaves, roots and stems
METHOD:
Steam Prawns in Thermochef Varoma basket on steam setting for 6 minutes.
You want them just cooked, don't overcook them or else they will be rubbery.
Allow to drain into basket.
Dice mango.
Place warm prawns and remaining ingredients into a bowl and mix thoroughly.
Using a small flat bowl spoon mango prawn cocktail mixture into the bowl overfilling it a little. Upend a serving plate onto the top of the bowl and quickly turn right side up. Give the bowl a press down and little jiggle, lift straight up, to remove and serve with lime wedges to garnish if desired.
