Full Recipe:
Ingredients:
2lb Eggplant, cubed
1lb Extra-firm tofu
¼ cup minced shallots
¼ cup chopped scallions
2 tbsp minced garlic
1-2 thai chili peppers
2 tbsp julienned ginger
2 tbsp rice vinegar
1 tbsp fish sauce
3 tbsp soy sauce
2 tbsp flour
2 tbsp sugar
3 tsp black pepper
3 tbsp sesame oil
Instructions:
1. Start by frying tofu in hot oil until golden brown. Should take less a min on each side. Drain excess oil on paper towels. Set aside.
*Its important to wrap tofu in paper towels and microwave to draw out the moisture before frying.
2. In a large pan (or a wok if you are fortune to own one), heat up vegetable oil. Sautee shallots, garlic, ginger, and pepper for a few minutes until translucent and flavors are released. Add eggplant and tofu to the pan. Stir to mix.
3. Add rice vinegar, soy sauce, fish sauce, black pepper and sugar to eggplant and tofu.
4. Stir constantly until eggplant is cooked (3-4min).
*If you like your eggplant more or less tender, adjust the cooking time accordingly.
5. Dissolve flour in ¼ cup water. Add to pan. Stir to mix.
*At this point, the stir fry should have a thick consistency.
6. Finally, add green onions and sesame oil. Stir well.
7. Serve stir fry with rice and enjoy!
