Yup… this is was even better than I expected, and I had high expectations! A while ago I saw the legend @bothegoattv make a version of this that I knew I wanted to try… and I decided to combine it with the breakfast smashburger tacos I made a few months ago when the trend started by @chilesandsmoke started!
Hands down, a must try!
For the Custard:
3 eggs
1/2 cup heavy whipping cream
1/2 cup milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 tbsp sugar - optional for this!
2 tbsp butter
Flour tortillas
Breakfast sausage Pattie’s
Additional eggs for scrambling
Maple syrup
Chives
Start by mixing the custard ingredients together and whisking until smooth! Set this aside and melt 2 tbsp of butter in a pan over medium high heat.
When the pan is hot, place down the breakfast sausage patty, then dip a flour tortilla in the French Toast Custard before placing it over the top of the sausage.
Now just like with a smash burger, use parchment paper to avoid sticking and smash it down flat. Let this cook for 2-3 minutes on the first side, then flip and cook for 30-45 seconds.
Finish the taco by filling it with whatever you like! I really enjoyed the version I showed in this video and highly recommend it!
