Steamed spare ribs with black bean (豆豉蒸排骨) is a favourite of mine. Every time I cook spare ribs in the shop, I leave a piece out to make steamed spare ribs with black bean. This is a popular Chinese dim sum dish normally serve in small plates steam in bamboo steamer. It’s very easy to make, just a case of chopping the pork spare ribs into small piece and marinate with condiments and steam over high heat for 15 minutes. Some finely chopped spring onions are garnish on top for presentation.
Below is my recipe for you guys to try at home.

Ingredients:
600g pork spare ribs (chopped into 3 cm pieces)
2 teaspoon black bean
1 red chilli
Some finely chopped spring onion




Condiments:
Half teaspoon salt
Half teaspoon MSG
Quarter teaspoon white pepper powder
Half teaspoon potato starch
1 teaspoon light soy sauce
1 tablespoon sesame oil
1 tablespoon shaoxing cooking wine

Method:
Chopped pork spare ribs into 3 cm pieces, soak for an hour and drain.
Leaving the spring onion out, mix all the ingredients and condiments together. Allow it to marinate for an hour before transfer onto a small dim sum plate (or a normal large plate) and steam over high heat for 15 minutes.
Garnish with the finely chopped spring onion to complete.
