Chicken Curry Chinese Style
Ingredients:
1. Chicken, I use about 700-800g, chopped into bite size.
2. 2 potatoes and 2 carrots diced into bite size. Can add beancurd skin if you like. Make sure you soak it in water first to make it soft before adding.
3. Curry paste or powder, mixed with water.
4. 2 shallots chopped into 4 quarters, 4 cloves of garlic smashed and a thumb of ginger thinly sliced. Also a packet of mixed spices.
5. Santan (coconut milk)
6. Sugar and salt to taste.
Cooking:
1. Saute diced potatoes and carrots, till it brown. It is to make sure the potato stays firm and not ‘squished’ or mushy later when cooked. Keep aside.
2. Saute shallots, ginger, garlic and mixed spices in hot cooking oil until fragrant.
3. Put in chicken and stir fry for a while. Pour in the curry mix slowly while stirring and mixing the chicken with it. Let it boil for a while.
4. Put in santan, sauted diced potatoes and carrots. Mix well and let it boil, keep the fire on medium heat.
5. Add in salt and sugar to taste. Chinese style curry is not spicy (no chillies added), but a little bit sweet. Add water depends on the gravy thickness you like.
6. After 7-8 minutes, it is ready to serve!
Kari Ayam Stail Cina
Bahan-bahan:
1. Ayam, dalam 800g dipotong jadi saiz ketulan.
2. Ubi kentang dan lobak merah dipotong kecil. Boleh tambah fuchuk kalau suka. Kena rendam dulu biar lembut.
3. Pes kari atau serbuk kari dicampur air.
4. Bawang merah 2 biji potong 4, bawang putih 4 ulas ditumbuk, sepotong halia dihiris nipis. Rempah ratus 1 paket.
5. Santan kelapa
6. Garam dan gula secukup rasa.
Cara Memasak:
1. Panaskan sedikit minyak dalam kuali dan goreng ubi kentang dan lobak yang sudah dipotong kecil, sampai sedikit garing (warna coklat). Ini supaya ubi kentang tidak hancur dan lembik semasa dimasak nanti. Keluarkan dan letak di tepi.
2. Tumis bawang putih, bawang merah, halia dan rempah ratus sampai wangi.
3. Masukkan ayam dan gaulkan rata dengan tumisan bawang dan rempah ratus. Tuangkan campuran air kari dengan perlahan sambil kacau ayam dalam kuali. Biarkan mendidih.
4. Masukkan santan, ubi kentang dan lobak tadi, kaca rata dan biarkan mendidih.
5. Tambahkan garam dan gula secukup rasa. Biasanya kari ayam stail Cina tidak pedas, tetapi sedikit manis. Tambah air kalau perlu, ikut kepekatan kari yang anda suka.
6. Selepas 7-8 minit, kari ayam stail Cina sudah siap dihidang!
