One Day Sourdough
I have been doing this one day sourdough and seems to work out just fine for me, the only thing that I needed to change here is my proofing time, Surely it can be pushed more!
Fed my starter 10:00 pm the night before and normally it would peak in 6 hours and stay peaked for 1 to 2 hours, Was planning to wake up early but didn’t so I ended up with a starter that’s already collapsed @ 8:00 am.
I did an hour of Autolyse using warm water about 34°C.
Recipe:
280g Strong Bread Flour
70g Whole Wheat Flour
80g Starter(collapsed or not at it’s peak, hours past it’s peak) 22%
260g Water
7g Salt
1 Hour Autolyse with warm water
5 Hours Bulk Fermentation
1 hour Cold proof
Baked at
250°C for 20 minutes
200°C for 20 minutes
