Zaatar is the Arabic word of thyme (oregano, sage) , it is a wild herb that grows throughout hills and mountains in many countries in Middle East.
Zaatar fatayer (bread) also known as “fatayer fallahi” which is translating as a "villagers’ pie".
Aromatic flat bread with wild fresh zaatar this is what you need to try!
the recipe serves 6-7 fatayers (breads).
Dough Ingredients:
3 cups (500 g) all purpose flour
1 teaspoon (5g) instant yeast
1 teaspoon (5g) salt
1 teaspoon (5g) sugar
90 g of Olive oil (1/3 cup)
250 ml laban (plain drinking yogurt room temp.)
Filling Ingredients:
3-4 cups fresh zaatar leaves (thyme), washed and drained
1 medium size onion, finely chopped
2 tbsp. (30 ml) olive oil
1 tbsp. sumac
1 teaspoon salt
1. In a big bowl, combine all purpose flour, yeast, salt, sugar, and olive oil. Rub the mixture together until oil is well combined into the flour. Add one cup of laban (drinking yogurt) and knead the dough till smooth. Uaully it takes 4-5 minutes. Cover the fatayer dough (to crate a needful humidity level) and let it rise double for 1-2 hours in a warm place.
For the Filling:
For this pastry we will use leaves of Zaatar. Remove the leaves Zaatar, wash few times and drain nicely. In a bowl combine zaatar (thyme) leaves, chopped onions, sumac, salt, and olive oil. Mix all together and leave aside.
once the dough is double in zise, devide dough for few pieces and take one piece, roll it out thin 2-3 mm and place zaatar. (how it shown in a video). make the rest of dough the same way.
Preheat the oven, and bake the zaatar fatayer (bread) at 180c - 365 F for 10 mins on first size and 5 minutes on the other side ( or till golden brown color).
