If you were ever wondering how to make Baba Ganoush (aka Roasted Eggplant Dip) from scratch yourself at home, then ya gal has got you covered! This recipe for Baba Ganoush is so easy to make, you'll never want to buy it from the grocery store again. All you need are a few simple ingredients to get started. I'm not going to lie, we can't necessarily call this recipe for Baba Ganoush quick but it's worth all the time it takes...trust me! Don't let that deter you, though, a lot of that time is hands off to allow the eggplant to oven roast to perfect then cool enough to handle.
An important step in this recipe for Baba Ganoush is making sure you allow the eggplant time to release moisture after roasting. Simply let it stand in a colander over a bowl for about 20 minutes and then press the pieces down lightly with a fork. Don't skip this step or you'll end up with a runny/watery dip.
Another note: Don't be like me and forget to mince your garlic before adding it to the food processor with the other ingredients. Because we're pulsing instead of blending, you'll end up with large chunks of garlic if you don't mince it beforehand.
