HOMEMADE PESTO SAUCE RECIPE
INGREDIENTS
• ½ Walnuts
• 2 Cloves Garlic
• ½ tsp Salt
• 1/2 tsp Ground Pepper
• ½ cup Fresh Basil (Roughly chopped)
• Lime Juice (1 Lime)
• ½ cup Avocado Oil or Olive Oil
INSTRUCTIONS
• Combine all the ingredients in a food processor except for the oil
• Start by pulsing and slowly drizzle the oil
• Chop until the pesto sauce is smooth
BEEF FILLING RECIPE
INGREDIENTS
• 1 cup Yellow/Spanish Onion (Chopped)
• 500 grams Minced Beef
• 3 tbsp Tomato Paste
• 6 Clove Garlic (Chopped)
• 2 tbsp Yellow Mustard
• 2 tbsp Worcestershire Sauce
• 1 tbsp Italian Seasoning
• ½ tsp Salt
• ½ tsp Ground Pepper
INSTRUCTIONS
• Saute onion in a large pot over medium-high heat for 5 minutes
• Add the minced beef and cook half-way
• Add the seasonings: Tomato paste, Garlic, Mustard, Worcestershire Sauce, Italian Seasoning, Salt, and ground pepper.
• Brown until the meat is fully cooked.
PESTO ANF BOLOGNESE LASAGNA ROLL RECIPE
INGREDIENTS
• 1 Egg (whisked)
• 500 grams Ricotta Cheese
• 250 grams Frozen spinach (thawed and squeezed dry)
• 1 cup Mozzarella Cheese (shredded)
• 1 cup Pesto Sauce
• 12 Lasagna Noodles (cooked)

INSTRUCTIONS
• Combine in a large mixing bowl egg, ricotta, and Mozzarella cheese, spinach, and pesto sauce. Mix well. Set aside.
• Place lasagna noodle flat on a clean surface, and spread a thin layer of the cheese mixture
• Spread a thin layer of the ground beef fillings
• Gently roll the lasagna
• Place the rolls in the baking pan and add a generous amount of bolognese sauce on top
• Sprinkle some shredded Mozzarella cheese on top
• Bake for 30 minutes in preheated oven at 375 deg. F
• Garnish with chopped fresh basil on top
