Ghee/Clarified Butter/Sajuk tup. Made up of cream. can use whole fat cream or cow milk cream. ghee is used to make sweets, added to dal ,applied on parathas and roti as well as use as medicine.
Ingredients-
milk cream- 700 gms
Method-
1 st method- collect milk cream of 10 days. take thick bottom wok. transfer cream into it, keep on low flame,stir occasionally. after 40 to 45 mins ghee is separated from granules. once you see transparent liquid and separeated brown granules, it means ghee is ready. take steel strainer and strain ghee.
2nd method-
take cream, beat for 10 mins. then add 1 glass cold water , again beat for 5 mins, butter will get separated from butter milk, remove butter . take thick bottom wok , put butter into it . keep on low flame and stir occasionally. after 20 mins ghee is ready.
once ghee is cool , keep it glass jar.
Tips- you can keep ghee for months and even year in air tight glass jar
when we make ghee , we get brown granules like khoya. from that granules we can make tasty sweet dish.
never use cream of more than 12 days , it can leave unpleasent smell while making ghee.
