James Beard Foundation Award Winner, Chef Janos Wilder, brings decades of experience to the Downtown Kitchen + Cocktails restaurant in Tucson, AZ. Chef Wilder's road to Tucson included stops in Northern California, Nashville, Boulder, Santa Fe and France. He gained an appreciation for local ingredients at every stop. After arriving in Tucson, he found local gardens with chilies, beans, squash and cilantro. In the desert he found an array of ingredients including Prickly Pear fruit and mesquite flour. Today he uses the local harvests in the unique recipes on the menu at Downtown Kitchen + Cocktails. Chef Wilder talks about his culinary philosophy, which combines food and culture.
