Want an easy but impressive dessert for your next dinner party, family gathering or special celebration? Then you might want to watch this "How-To" video produced by CCM's Media Center and Professor Mark Cosgrove, chair of the Hospitality Management and Culinary Arts Department. In the video, Cosgrove shows how to make Cherries Jubilee, the flambéed dish created by Auguste Escoffier for one of Queen Victoria's Jubilee celebrations.
Ingredients: 1/4 cup demerara sugar; 1 tablespoon Arrowroot; 1/4 cup orange juice; 1 cup dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries); 1/2 teaspoon finely grated orange zest; 1 jigger Kirschwasser (cherry brandy); 2 servings vanilla ice cream
