Today I'm telling you the method I use to feed and maintain my sourdough starter. I use an easy hands off approach that wastes less starter and flour because you only feed it when you're ready to use it. I also find that by keeping it in the refrigerator the starter is less sour.

Tips
- keep refrigerated
- pull out to feed the night before you need it
- feed starter unbleached flour and non-chlorinated water
- feed more flour than water making it a thick mixture
- always save back some starter for the next time
- use what you need, refeed super thick and put back in fridge for the next time
