Good old fashioned Jewish appetizer . If you love salted herrings it is right up your street ! I make it as a salad but throw all in a blender - and get another version of this dish - a spread for a rye bread.
Generous party size portion :
500 g salted herrings drained weight. ( plain, just salted, possibly lemon acid too).
100 g butter, 3 eggs, 1 tsp sugar, 2 tsp vinegar, 1 small onion, some spring onions, 1 large apple, black pepper
Dill and lemon for the decorations, serve with toasted rye bread
A more economical version - substitute some of the herrings with some milk soaked white bread and use oil instead of butter.
