Thanksgiving recipes part 3 is what I will be sharing with you today. This is my green bean casserole that is vegan and oil free. This version is healthier than the traditional green bean casserole recipes. This version is gluten free, oil free and 100 % plant based. The full recipe and instructions are below. Enjoy!!
Ingredients
1 pound green beans
10 oz. of sliced mushrooms
1 onion finely chopped
1/2 tsp crushed garlic
1 not-chikin bouillon cube
2 cups warm water
1 cup unsweetened plant milk ( i used soy milk)
1/2 tsp poultry seasoning
1 tsp fresh thyme
1/2 cup gluten free flour ( or any flour you like)
1/4 cup panko bread crumbs (optional)
Ingredients for crispy onions
1 onion thinly sliced
2 T tapioca flour
Instructions for onions
Place the sliced onion into a bowl and separate the rings, sprinkle the flour over the onions and toss to coat. Use more flour if needed. Place half the onions into your air fryer and cook on 380 degrees for 5 minutes. Shake the basket to move onions around and cook for another 5 minutes, checking at 3 minutes. Add more time if needed to achieve desired crispness. The onions will burn quickly so don't walk away. Cooking times will vary. Then do the same with the second batch. Then set aside.
Instructions for casserole:
Preheat oven to 375 degrees
Blanch green beans in boiling water for 3 to 5 minutes then rinse in cold water to stop the cooking process and set aside. Add one cube of the bouillon into 2 cups of warm water and mix to combine, set aside
In a deep pan add 2 T of water on medium heat. let pan heat up for a couple of minutes. Then add onions and garlic and saute for 3 minutes. Then add mushrooms and let the mushrooms cook down as shown in the video adding water as needed.. Add poultry seasoning and fresh Thyme and saute for another minute. Then sprinkle the flour over the mushrooms and stir. Add 1 cup of the broth to the pan and stir till combine. Turn up the heat and add the rest of the bouillon and whisk until all combined and there are no lumps. Add the plant milk and turn heat down to a simmer and simmer of a couple of minutes, or until it thickens Then add every thing to a 9 x 13 dish. Cover and bake for 25 minutes then uncover and add onions to the top and bake for an additional 10 minutes. Sprinkle with panko bread over the top for extra crunch but this is optional.
