If you only make one of my recipes, make this one!
Ingredients - 2 red onions thinly sliced, 2 level tbsp brown sugar, 4 tbsp red grape juice or red wine, 1 tsp chopped fresh thyme, 3 tbsp balsamic vinegar.
Method - Fry onions over a low heat until soft and translucent. Sprinkle on sugar, then add grape juice or red wine, fresh thyme and balsamic vinegar.
Cover and simmer for 3 minutes, then simmer, uncovered, stirring often, until sticky and dark red in colour. This relish tastes great in sausage sandwiches.
