you will need...

for the gluten free sponge:
75g sugar (90mls / ⅓ cup)
3 eggs
25g pure gluten free cocoa powder (50mls / ¼ cup)

white chocolate mousse:
180mls double cream
150g white chocolate

dark chocolate mousse:
250mls double cream
100g dark chocolate

meringue mushrooms:
1 egg white (30g)
60g icing sugar
red gel food colouring
- follow a ratio of 1 egg white: 2 icing sugar - in grams
(if your egg white weighs, say 35g, use 70g icing sugar)

ganache:
50mls double cream
25g dark chocolate

chocolate twigs:
25g cocoa powder
40g dark chocolate
