First things first, I am not a butcher. This is simply how I break down a moose. It’s a collection of technique I have learned over the year while processing my own wild game. This truly has become my 2nd favourite part of hunting, eating it is of course number 1. One thing I truly love is that even now, after 25 years of processing my own wild game this year I learned about the flat iron steak and where to cut it from. Be sure to try and find it if you plan to cut up your wild game.
Over the years I have processed Deer, Caribou, Moose and Elk. I find them are all very similar in how you cut them up so these technique can be used to process wild game of all kinds I think.
