Ingredients:
2 boxes mushrooms (1 portobello, 1 white button or 1 type is fine)
1/2 large red onion finely diced
1 and 1/2 tbs butter
2 and 1/2 tbs olive oil
1 and 1/2 tbs flour
1/2 cup milk
2 cups vegetable stock
2 leeks finely chopped
2 bay leaves
3-4 thyme leaves
Salt and pepper
Recipe:
Set 1/2 cup mushrooms aside for decorating (optional)
Melt 1 tbs butter and 2 tbs olive oil in a large pot add the onions and leeks and cook until softened then add the remaining mushrooms and stir on medium heat until cooked and browned for about 10 minutes
Add the flour and stir for 2 mins then add the milk, stock, bay leaves and thyme
Allow to boil then reduce the heat and simmer for 15 minutes, covered
In another pan melt the remaining 1/2 tbs butter and 1/2 tbs olive oil add the remaining mushrooms
For decoration: parsley, thyme and cooking cream
