Ingredients
• 2 cups all-purpose flour
• sweetener (the equivalent of 4 tablespoons of sugar)
• a pinch of salt
• 1 teaspoon baking soda
• 500 ml kefir or yogurt
• 2 tablespoons melted butter
• 3 eggs
• 1 tablespoon butter, plus more for serving
• 1 cube of butter for serving
Preparation
1. In a large bowl mix the eggs, add the kefir, baking soda, and mix.
2. In a medium bowl, combine the flour, salt, and sweetener.
3. Add the dry ingredients and gently mix them.
4. Let the batter rest for 15-30 minutes at room temperature.
5. Heat the pan, add the batter and cook for 2-3 minutes, until bubbles start to appear on the surface. Flip the pancake over and cook for another 1-2 minutes, until golden brown. Repeat with the remaining batter.
6. Serve the pancakes with butter and maple syrup.
