Hey guys! So this is my very first "Chinese herbal soup" that I've made. It combines a light, but slightly savory vegetable soup base with sweet papaya and crunchy pieces of tremella. Tremella is a white fungus known for it's nourishing skin properties. This is the perfect soup for winters or anytime you're looking to give a little TLC to your skin :) Hope you guys enjoy!
Papaya Tremella Soup - Vegan
- 10 cups water
- 2 carrots, cut into chunks
- 1/4 onion, sliced thin
- 1 tablespoon apricot kernels
- 1 teaspoon goji berries
- 3 dates
- 1 medium papaya
- 1 - 1 1/2 pieces tremella, rehydrated in water for 5-10 minnutes
- 1 teaspoon soy sauce
- salt to taste
Mom's Original Recipe (non-vegan)
- 1 pound chicken breasts, cut into chunks
- 15 cups water
- 4 dates
- 2-3 tablespoons apricot kernels,
- 2-3 slices of ginger
- 1 tremella bud, rehydrated in water for 5-10 minutes
- 1 medium papaya, cut into cubes
