PAYASAM (Kheer)

This is a easy way to make delicious Payasam/Kheer in pressure cooker.
Rice ,Milk and sugar cooked in the right proportion in a cooker and garnished with dry fruits roasted in ghee.

INGREDIENTS

Raw Matta Rice or Basmati Rice or any White Rice - 1/2 cup
Full cream milk- 4 cups
Water - 1 cup
Sugar - 1/2 cup
Cardamom (elaichi)-3 to 4
Ghee - 1 tablespoon
Cashewnuts and Almonds

Take a big pressure cooker which is deep so as to avoid milk oozing out.
Add the 4 cups milk,1 cup water,1/2 cup sugar and the soaked and washed rice to the cooker and mix well.
Close the pressure cooker and keep it on the smallest stove.No need to put weight on the pressure cooker.
Once steam starts coming, keep the stove flame to the lowest and cook for next 30 mins.

After that switch off the stove and let it rest.

Open the cooker after the full steam has gone (minimum 20mins)

Add crushed cardamom to the payasam(Kheer).

In a pan heat the ghee and fry the cashewnuts and crushed almonds. Add it to the payasam(Kheer) and mix well.

Delicious payasam (Kheer) is ready to be served 😊
