Lactose free vanilla ice cream (*without real cream or milk!)
Why not try vanilla ice cream without real cream! It tastes so delicious:)

SERVES 4 - 5
PREP TIME: A few mins
COOK TIME: A few hours
INGREDIENTS:
- 300ml of lactose free milk
- 300ml of lactose free double cream
- 2tbs of vanilla bean extract.
- 3 large egg yolks or 4 small egg yolks
- 115g of caster sugar

Method:
1.Firstly mix the egg and sugar in a bowl together and leave aside until needed
2.Pour the cream and milk together in a large pan with 2tbs of vanilla bean extract and stir on a low heat until warm.
NOTE* It’s so important that liquid doesn’t boil! When it hits approx 170F take of heat and place in a sink of cold water and stir constantly until the liquid cools.
3.Pour half the cream into the egg and sugar mixture. Make sure you combine all the ingredients and then pour the mixture back into a pan with the remaining liquid. You want to repeat the first step. So on a low heat, heat the liquid up until 170F (liquid is hot but not boiled!). You will know when it’s ready, when it’s coats a spoon. As soon as it’s ready then place the liquid back in a sink of cold water and stir until cooled.
4.Place the liquid in a container and leave in the fridge for approx 30-45 minutes and stir! Repeat this every 30 minutes until you get the right consistency.
5.If you have an ice cream maker: place into the maker and let it work it’s magic for 60 minutes.
