How do you cook aubergine, eggplant or brinjal? Let me show you in this video how I cook the tasty aubergine (eggplant or brinjal) or ‘terung’ (in Malay) dish using a Malaysian (Asian) recipe. ‘Terung masak sambal tumis’ is one of my favourite vegetable dishes in Malaysia.

Ingredients
1. Aubergine (1 whole); 2. White onion (1 whole); 3. Garlic (3 cloves); 4. Malaysian ‘sambal tumis’ (spicy sauce for stir fry) paste (1 – 2 tbsp); 5. Cooking oil; 6. Seasoning granule (to taste); 7. Sugar (1 tbsp or to taste); 8. Water

Preparation
1. Cut the aubergine into half moon-shape slices. Put in a bowl and set aside.
2. Slice half of the white onion and chop the other half into any size.
3. Cut the garlic into any size.
4. Blend the chopped white onions, garlics and water (add water just enough to cover the mixture) using a food processor. Transfer the blended mixture into a bowl. Set aside.

Cooking
1. Put suitable amount of cooking oil in a pan to fry the aubergine. Fry the aubergine slices under high heat until they are a bit soften and a bit golden yellow in colour. Transfer fried aubergine slices into a bowl and set aside.
2. Heat 3 tbsp of cooking oil in another pan. Add in the blended mixture of white onions, garlics and water. Fry under medium heat for about 1 – 2 minutes or until the fragrant comes out. Stir constantly to avoid burning.
3. Add in the ‘sambal tumis’ paste. Mix well and fry under medium heat for about 1 – 2 minutes or until the oil starts to separate. Stir constantly to avoid burning.
4. Add in the white onion slices. Mix well and fry under medium heat for about 1 – 2 minutes or until the onions are soften. Add some water if the sauce is too dry.
5. Add in the fried aubergine slices. Mix well and stir gently to avoid the aubergine slices become mushy. Simmer under low heat for 2 minutes or until the oil starts to separate.
6. Switch off gas. Add in the seasoning granule and/or sugar to taste.

Serving
Transfer the cooked aubergines into a serving bowl. Serve with rice and other dishes.
