Rice and Coconut are a match made in heaven! Koiloreos bring about the greatness of these humble ingredients with such ease, that they make for a quick, simple and easy breakfast option :) If you like to eat them plain, feel free to sweeten it with Sugar (depending also on how sweet the Coconut is)— this can also go well with your evening tea. However, if you prefer dipping it in some savoury dishes/curries, then this recipe will suffice! A hole-y recipe for this season.

1 US Cup = 240 ml
This recipe can make 12 Koiloreos (Rice & Coconut Pancakes)
Ingredients:
1 & 1/2 Cups Goan Parboiled Rice
1 & 1/2 Cups Fresh, Grated Coconut
Salt to taste (approximately 1 teaspoon)
Water (a total of 2 Cups; this may vary)
*Sugar is optional, you may add about 2 Tablespoons
NOTES:
• The batter must be coarsely ground and its consistency must be pourable, but not too thin
• Stir the batter before ladling; pour in one spot and don't spread
• The pan must be HOT before ladling the batter; so increase the flame to high for each pancake
• 45-60 seconds after ladling, pores will be seen. Only after the surface is full of holes, cover the pan and lower the flame to medium.
• Since they are fragile, slide them off the pan onto a plate.
