Ingredients

Choux pastry

Water 60g
Milk 60g
Butter 50g
Sugar 1/2 tsp
Salt 1/4 tsp
AP flour 70g
2 Eggs (110g) This depends how you cook the choux. You might need more or less

Method
1. Put water, milk, butter, sugar, salt in the pot
2. Once the butter is melted add flour and mix it well
3. Cook the dough for about 2 min
(Cooking time depends on amount)
4. Add eggs gradually and mix it together
(Don't put the eggs all at once)
5. Pipe it into round shape and brush water on the mixture
6.Sprinkle sliced almonds
7. Bake at 390F for about 15min and reduce the oven to 350F bake for about 15 to 20 min
Don't open the oven when you lower the temperature.
I know you want to check but be patient! If you open the oven it might deflate.


Hazelnut cream

Milk 250g
1/3 Vanilla bean
Egg yolk 80g
Sugar 40g
Corn starch 20g

Unsalted butter 180g
Hazelnut praline 120g

Method
1. Simmer milk and vanilla bean together
2. Mix sugar, yolk and corn starch in a bowl
3. Add the milk gradually into the yolk mixture
4. Strain the mixture and put it to the pot, cook it until it thickens
5. Cool it down the mixture (Room temp.)
6. Add soft butter and hazelnut praline
7. If the cream is too soft, keep it in the fridge until it sets enough to pipe

*You can make 3 of Paris brest (around 9 cm) from this recipe

물 60g
우유 60g

이건 얼마나 반죽을 익혔나에 따라 계란 양이 달라질 수 있어요.

만드는 법
1. 물, 우유, 버터, 설탕, 소금을 냄비에 넣고 버터가 녹을 때까지 끓여주세요.
2. 버터가 다 녹으면 중력분을 넣고 잘 섞어줍니다.
(밀가루 덩어리가 없도록 잘 섞어주세요)
3.중불에 두고 약 2분간 익혀줍니다.
(반죽의 양에 따라 시간이 달라져요)
4. 한김 식힌 반죽에 계란을 조금씩 넣고 잘 섞어주세요
(계란을 한꺼번에 넣으면 잘 섞이지 않으니 조심!)
5.영상에 보이시는 것처럼 둥근 모양으로 짜주시고 그 위에 물을 묻혀줍니다. (붓이나 분무기 사용하시면 돼요)
6. 슬라이스 아몬드를 뿌려줍니다
7. 195도에서 약 15분간 구워주시고 온도를 180도로 낮추고 15~20분간 구워주세요
(중간에 오븐 여시면 슈 반죽이 가라 앉을 수 있으니 색이 황금빛에서 조금 어둡다 싶을 때 열어서 확인하세요. 슈를 들어올렸을 때 안이 비어있는 느낌이 들면 된거에요!)

헤이즐넛 크림

우유 250g
바닐라빈 1/3 쪽
노른자 80g
설탕 40g
전분 20g

무염버터 180g
헤이즐넛 프랄린 120g

만드는 법
1. 우유와 바닐라빈을 냄비에 넣고 끓여줍니다
2. 계란 노른자와 설탕, 전분을 볼에 넣고 거품기로 잘 섞어주세요
3. 데워진 우유를 천천히 노른자에 부우면서 거품기로 섞어줍니다
4. 체에 거른 다음 냄비에 다시 옮기고 익혀주세요.
5. 몽글몽글 뭉쳐지는게 보이면 불을 끄시고 거품기로 열심히 섞어주세요
6. 실온에 두고 식힙니다
7. 부드러운 무염버터를 넣고 잘 저어줍니다.
8. 헤이즐넛 프랄린을 넣고 섞어주세요
9. 헤이즐넛 크림이 완성!
(크림이 너무 부드러우면 냉장고에 잠시 넣고 짤주머니에 넣고 짤 수 있을 정도로 단단해질 때까지 기다렸다가 사용하세요)
